The 2019 vintage of Scarlet is a blend of sour stout aged in oak barrels for 2 years, sour imperial stout aged in oak barrels for 2.5 years, and Michigan Montmorency cherries. Soured with lactobacillus and pediococcus bacteria as well as brettanomyces yeast. The beer has a velvety smooth mouthfeel. Luscious waves of cocoa roll along the tongue, and the cherry sweetness rounds out the sour flavor profile.
